In the early days, John O’Brien’s experimentation with BBQ sauces led to the creation of flavors that sparked a culinary revolution. When it came time for health department approval, a bold decision was made – to build a trailer and certify it as a full professional kitchen. Little did we know that this decision would shape the destiny of OBQ.
In March of 2020, amidst the onset of the COVID-19 pandemic and a wave of layoffs, John O’Brien found himself at a crossroads. With resilience and a taste for adventure, he, along with his two sons, decided to take the certified trailer full-time as a BBQ food truck. Thus, the journey of O’Brien BBQ officially began.
The initial months saw us serving traditional BBQ, but it was our mac and cheese that stole the spotlight. With a unique casserole-style twist and a commitment to using high-quality smoked ingredients, our mac and cheese became the star of the show. Recognizing our customers’ love for this classic comfort food, we pivoted and created our first truck – “Two Brothers Mac Shack.”
As we navigated through our first and second years, our dedication to flavor and quality remained unwavering. Inspired by our roots in traditional BBQ, we decided to expand our menu, reigniting the flame of passion for traditional BBQ and sauces. This evolution marked the beginning of our growth, and today, O’Brien BBQ boasts three trucks, each serving up a delectable fusion of classic and contemporary BBQ dishes.
